Turkish Eggs

~with garlic and yoghurt

Eggs for breakfast is always a yes if you ask me, but I kinf of got bored of the same versions every time: boiled eggs, fried eggs, omelette.. It was about time I tried out something new, a taste I couldn't have imagined before: eggs with garlic sauce. No need to say that it was a great success, and it's definitely a breakfast that got its place in our monring routine. The combination of garlic, creamy egg yolk and browned butter takes everything to a whole new level of delicious.
Ingredients fot two portions:
✔ 4 eggs
✔ water for boiling
✔ 1 tbsp vinegar
✔ 300 g greek yoghurt
✔ 2 cloves of garlic
✔ 30 g butter
✔ 1 tsp olive oil
✔ 1/2 tsp paprika
✔ slices of toast
✔ salt, pepper by taste
✔ dried dill by taste
Instructions:
Put on some water to boil. Add the vinegar.
In a small bowl, mix the yoghurt with the minced garlic, salt and pepper. Set aside.
Take a strainer and break the first egg in it to get rid of the egg white excess.
When the water starts boiling, add the first egg. The strainer should be as close as possible to the water when you let the egg go.
While the first egg is boiling, break the second one in the strainer. Repeat like this with the rest of the eggs.
The eggs will be ready in about 2-3 minutes each. Take them out on a paper napkin to dry.
When all the four eggs are ready, set them aside.
Now take a small saucepan and brown the butter in it. Be careful not to burn it!
When the butter is browned, take off the heat. Add the olive oil and paprika.
For serving, transfer 1/2 of the garlic sauce on a plate, then two eggs and finally, 1/2 of the butter. Decorate with dried dill, serve with toast.
