Eggs Benedict

When it comes to having breakfast out in the town, Eggs Benedict is always a popular option: Toast, ham, cheese and the perfect egg. The original recipe also comes with the special Hollandaise Sauce, but I skipped that part because of the raw egg yolk and replaced it with chilli jam. You can also adapt this 'sandwich' to your taste quite easily. It is easy, qucik and good-looking, and goes perfectly with some orange juice or coffee.

Ingredients for 1:

✔ 1 egg

✔ water for boiling

✔ 1 tbsp vinegar

✔ 1 slice of toast bread

✔ 2 slices of ham

✔ 1 tsp chilli jam

✔ 1 slice cheese

✔ butter

✔ cheddar, parsley, chopped green onion, salt, pepper and paprika, green spices by taste

Instrictions:

  1. In a small cooking pot, bring some water to boil with the vinegar on high heat.

  2. Break an egg into a small bowl.

  3. When the water is boiling, reduce the heat and add the egg. The bowl should be as close to the water as possible when you let the egg go.

  4. It should be ready in 2-3 minutes, then take it out with a skimmer spoon on a napkin to dry a bit.

  5. Take the bread, spread some butter on it, add the ham, the cheese, the chilli jam and the egg. Decorate with grated cheddar, chopped green onion and add the spices by taste.
