Gingerbread Cookies

If someone asked me, 'What do you think Christmas tastes like?', I'd name these cookies with no hesitation. Preparing the dough, cutting the christmassy shapes, listening to Christmas carols, the smell my kitchen smells like while baking them and decorating them (more or less successfully) are one of the best parts of the season. Also, delicious and beautiful, they are a perfect gift idea that truly spreads the joy of sharing.

Ingredients for the dough:

✔ 1 kg flour

✔ 200 g icing sugar

✔ 250 ml honey

✔ 3 teaspoons of baking soda

✔ 1 teaspoon of baking powder

✔ 25 g gingerbread spice mix (the one I used contains ground cinnamon, nutmeg, coriander, ginger,cardamon, anise, anised-tree, clove and cumin)

✔ 300 g butter

✔ 3 eggs

✔ pinch of salt

Instructions for the dough:

  1. In a large bowl, mix together all the dry ingredients.

  2. Add the honey, butter and the eggs.

  3. Knead until dough is formed.

  4. Preheat your oven to 180 and line a baking tray with baking paper.

  5. Cut the cookies with your cookie cutters and place them on the baking powder.

  6. Bake on 180 for 10 minutes.

  7. Let them cool completely.

Ingredients for the icing:

✔ 2 wgg whites

✔ 400 g icing sugar

Instructions for the icing:

  1. Beat the eggs with the icing sugar until thick.

  2. On a small plate, draw a thin line and set aside for 5 minutes to see if the icing hardens.

Final instructions:

  1. When the cookies are cold,decorate them and set them aside for the icing to harden.

Tip: if you don't have a piping bag, you can use a plastic bag and cut one corner with a scrissor.
