Chicken Curry

~an elegant lunch idea

I've always been a huge fan of Indian spices and food in general, but until now, I've never tried to prepare anything at home. It was about time I did, so here is my first recipe inspired by the Indian cuisine: Chicken curry. It is not the original recipe, but one that I adapted to what I had at home, with lots of lost-in-the-fridge veggies in there to prevent food waste.


Ingredients:

✔ 300 g chicken breast, cut into small cubes

✔ 1 tsp coconut oil

✔ 1 large chopped onion

✔ 2 garlic cloves, chopped

✔ 1 courgette cut into small cubes

✔ 1 yellow California paprika cut into small cubes

✔ 500 g tomato paste

✔ about 300 ml water

✔ 50 g frozen vegetable mix (whatever type you like or have at home)

✔ salt, pepper by taste

✔ curry by taste (I used about 2-3tsp)

Instructions:

  1. In a large frying pan, fry the chicken with the coconut oil on small heat until the cubes are white on all sides.

  2. Take out the chicken. Add the onion and the garlic and fry for 2 more minutes or until the onions start to get brown.

  3. Now add the tomato paste, the water and the rest of the vegetables. Boil on medium heat until all the vegetables are boiled and all the water has evaporated. This should take about half an hour, depending on the vegetables you're using.

  4. Add the chicken and the spices. Boil for another 5 minutes.

  5. Serve with basmati rice prepared as indicated on the package.
