Broccoli Cream Soup

One of my favourite lunch ideas - not only because it is ready in half an hour, or because it looks so pretty, but because it also tastes amazing, is super creamy and is the perfect match when you need a break from heavy meals. I usually serve it with homemade breadsticks and grated cheese, but you can also add soup pearls or any kind of salty sticks.
Ingredients:
✔ 450 g frozen broccoli + about 1,5-2l water for boiling
✔ 2 potatoes + about 1l water for boiling
✔ 1 onion
✔ 1 carrot
✔ 1 spoonful of oil
✔ 2 dl cooking cream
✔ breadsticks, grated cheese for serving
✔ salt by taste
Instructions:
In a cooking pot, bring the water to boil, then add the broccolis and boil for 8-10 minutes.
Peel the potatoes, then put them to boil in as much water as it takes to cover them.
In the meantime, in a small pan, add the oil, the chopped onion and carrot and saute until the onion becomes soft and sparkling.
When everything is ready, drain the broccoli and potatoes, and transfer everything into a large cooking pot. Keep about 1/4 of the water in which the broccoli was cooked.
With the help of a hand-held blender, blend together the broccoli, potatoes and the onion, then add the cooking cream and some of the water the broccoli was cooked in until you get the desired density.
Add some salt by taste and serve it with breadsticks and grated cheese, or however you like it.
