Baked Penne

~with curd cheese

There are many delicious ways to enjoy curd cheese. If you check the blog, you will find several recipes with it, however, this one is one of my favourites. It is super easy and absolutely delicious, flavoured and sweet, a quick dessert idea that might not look that pretty, but will certainly make you crave another slice. Don't believe me? Ingredients for 4 portions:

✔ 100 g penne + water, salt and oil for boiling

✔ 3 generous spoonful of cottage cheese

✔ zest of a lemon or 2 drops of lemon essence

✔ 20 g bourbon vanilla sugar

✔ 3 eggs

✔ 4 spoonful of sugar

✔ cinnamon by taste

✔ 50 g breadcrumbs

✔ 2 spoonful of oil for the breadcrumbs

✔ butter to grease the baking tray


Instructions:

  1. Preheat the owen to 180° C and grease the baking tray.

  2. Boil the penne - follow the instructions on the package.

  3. In a large bowl, mix together the cottage cheese and the eggs, then add the zest of a lemon, 2 spoonful of sugar, 10 g bourbon vanilla sugar and cinnamon.

  4. When the penne is ready, drain and add it to the mixture, then transfer the mixture into the buttered baking tray.

  5. In a frying pen, brown the breadcrumbs in the oil, then add 2 spoonful of sugar, 10 g bourbon vanilla sugar and cinnamon by taste.

  6. Cover the penne-curd cheese mixture with the flavoured breadcrumbs and put it into the owen.

  7. Bake for about 25-30 minutes - or until the top is golden brown and your kitchen smells amazing, too.

  8. Leave it to cool a bit before serving.
